Sweet Chili Pineapple Chicken
This Chili Pineapple Grilled Chicken has been on repeat at our house! It is super simple to make and tastes great! Chicken marinated in sweet chili sauce, pineapple juice, and honey. The chili sauce gives the chicken a touch of sweetness without being overly sweet. The pineapple juice makes us feel like we were eating at the beach! We LOVE the tropical flair to the chicken. Add this to your menu ASAP!
How to Make Chili Pineapple Grilled Chicken
This chicken marinade is super easy to make with only four simple ingredients. In a bowl, stir together sweet chili sauce, pineapple juice, and honey. Place chicken in a resealable plastic bag. Pour marinade over the chicken. Marinate in the refrigerator for 30 minutes to overnight.
When ready to cook the chicken. Prepare the grill. Remove the chicken from the marinade and discard. Cook chicken on the grill until it reaches an internal temperature of 165ºF. Garnish chicken with dried parsley or cilantro.
Helpful Tips and Frequently Asked Questions
- I use Thai sweet chili sauce. You can find it in the condiment aisle.
- I like Frank’s Red Hot, Panda Express, or Thai Kitchen.
- Can make chicken skewers with veggies and pineapple chunks. Onion and bell peppers are great.
- Is this chicken spicy? No. The chili sauce is more sweet than spicy. For a spicier dish, add some red pepper flakes.
- Feel free to add garlic, ginger, or a splash of lime juice to the marinade.
- Can reserve some of the marinade or make extra to use as a dipping sauce.
- You can use this marinade on any cut of chicken – chicken breasts, chicken tenders, chicken thighs, chicken wings, or chicken drumsticks/legs.
- You can use boneless or bone-in chicken. Cook until a meat thermometer registers an internal temperature of 165ºF.
- Pound the boneless skinless chicken breasts to an even thickness. Put the chicken in a ziplock bag and use a flat meat mallet to carefully pound out the hump. This ensures that the chicken cooks evenly and you don’t have juicy chicken and half-dry chicken.
- I don’t have a grill. Can I cook the chicken breasts in the oven or skillet? Yes! To cook the chicken breasts inside, pan-sear it for 3 to 4 minutes per side. Place on a rimmed baking sheet or baking dish. Bake at 400ºF for 10 minutes, until it reaches an internal temperature of 165ºF.
- Can I cook this in the slow cooker? Yes. Cook on low for 4 to 6 hours. Shred the chicken and serve it over rice with some chopped green onions.
What to Serve with Grilled Chicken
This chicken is a winner every time I make it. Kids and adults gobble this up! I always have the ingredients on hand to whip this up at a moment’s notice. We like to serve this with some broccoli and pineapple coleslaw. Leftovers are great on top of a salad or chopped up in a quesadilla. These are already on the menu again for this weekend!
